For the steak:

  • 1 tbsp butter (optional, for finishing)

For the potato gratin:

  • 500 g white potatoes
  • 200 ml cooking cream (minimum 30% fat)

  • 50 g grated Parmesan
  • Salt, pepper and nutmeg

For finishing:

  • Fresh summer or autumn black truffles (or frozen truffles)

Method

1. Prepare the Potato Gratin

Thinly slice the potatoes, ideally using a mandoline.

Rub a ceramic baking dish with garlic, lightly grease it with butter and arrange the potatoes in layers.

Season each layer with salt, pepper and a pinch of nutmeg.

Pour the cream over the potatoes and sprinkle with grated Parmesan.

Bake at 180°C for 45–50 minutes, until the potatoes are tender and golden brown.

2. Cook the Steak

Remove the meat from the refrigerator 30 minutes before cooking.

Season with salt and pepper.

Heat a frying pan, add the olive oil and sear the steaks for 2–3 minutes on each side for medium-rare.

Add the garlic and rosemary during the final moments of cooking, followed by a tablespoon of butter, if desired, for a rich, glossy finish.

Allow the meat to rest for 5–10 minutes before slicing.

3. Finish with Truffles

Shave fresh black truffle over the potato gratin and steak while they are still hot.

Alternatively, drizzle each plate with black truffle oil after plating.
