Gourmet Recipe to Try at Home:

Beef Steak with Gratin Dauphinois and Shaved Black Truffles

Ingredients for 2 servings:

For the steak:

  • 2 beef tenderloin steaks (180–200g each)
  • Sea salt and freshly ground pepper
  • 1 tbsp olive oil
  • 1 crushed garlic clove
  • 1 sprig of rosemary
  • 1 tbsp butter (optional, for finishing)

For the gratin:

  • 500g white potatoes
  • 200ml heavy cream (min. 30% fat)
  • 1 garlic clove
  • 50g grated Parmesan
  • Salt, pepper, nutmeg

To finish:

  • Fresh (or frozen) summer or autumn black truffles
  • OR: Truffles Taste Black Truffle Oil (if fresh truffles aren’t available)

Preparation:

  1. Prepare the gratin potatoes
    Slice the potatoes thinly (ideally using a mandolin).
    Rub a ceramic baking dish with garlic, grease it with a bit of butter, and layer the potatoes.
    Season each layer with salt, pepper, and a pinch of nutmeg.
    Pour the cream over and sprinkle with Parmesan.
    Bake at 180°C for 45–50 minutes until tender and golden.
  2. Cook the steak
    Take the meat out of the fridge 30 minutes before cooking.
    Season with salt and pepper.
    Heat the pan, add oil, and sear the steak 2–3 minutes on each side for medium-rare.
    Add garlic and rosemary at the end, optionally add a spoon of butter for a glossy finish.
    Let the steak rest for 5–10 minutes before slicing.
  3. Finish with truffles
    Shave fresh black truffle over the hot gratin and steak.
    Alternatively, drizzle a few drops of black truffle oil over the plated dish.
